Darlene's Caramel Corn

This receipe is simple...yet AWESOME!

Spray large turkey roasting type pan with Pam to avoid sticking Pop 5qts of popcorn and place on turkey roasting pan.  (Add up to 1 lb of raw pecans, or othe raw nuts for extra flavor.)
Bring to boil the following ingredients:
  • 2 cups brown sugar
  • 1 cup (2 sticks) butter
  • 1/2 cup karo (corn) syrup
  • 1 tsp salt
After bringing to boil for 5 rminutes...Stir in 1/2 tsp of baking soda (to puff it up) stirring together for 5-10 seconds until puffed up.. (yes, PUFF is an official cooking term!)

Drizzle over ~5qts of popcorn and stir and work to cover or  popcorn as good as possible.

Place in oven at 250 and cook for 45 minutes and stirring/turning every 15 minutes.

Spread out over non stick surface to separate and cool.  Place in ziplocs for storing.
